Ingredients:

  • 1.5 lbs (700g) chicken, cut into pieces

  • Two tablespoons Cape Malay spice mix (Masala)

  • One onion, finely chopped

  • Two cloves garlic, minced

  • Two tablespoons of tomato paste

  • Two potatoes, peeled and cubed

  • One can (14 oz) diced tomatoes

  • 1 cup chicken broth

  • Two tablespoons of vegetable oil

  • Salt and pepper to taste

  • Fresh coriander leaves for garnish

  • Cooked rice or roti for serving


Instructions:

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.

  2. Stir in the minced garlic and the Cape Malay spice mix (Masala). Cook for another minute until fragrant.

  3. Add the chicken pieces and brown them on all sides.

  4. Mix the tomato paste, potatoes, chopped tomatoes, and chicken broth—season with salt and pepper.

  5. Add a pinch of sugar to balance the flavors.

  6. Cover the pot, reduce the heat, and let the curry simmer for 30-40 minutes, or until the chicken is cooked and the potatoes are tender.

  7. Serve the Cape Malay Chicken Curry with cooked rice or roti. Garnish with fresh coriander leaves.
