  1. Heat the olive oil in a non-stick skillet over medium-high heat. Add the sliced potatoes and onions. Cook, stirring occasionally, until the potatoes are tender and slightly golden, about 10-15 minutes. Remove them from the pan and drain the excess oil.

  2. In a mixing bowl, beat the eggs and season with salt.

  3. Add the cooked potatoes and onions to the beaten eggs and mix well.

  4. Heat a tablespoon of olive oil over medium heat in the same skillet. Pour the egg and potato mixture into the skillet.

  5. Cook the tortilla for about 3-4 minutes on one side until it starts to set.

  6. To flip the tortilla, place a large plate over the skillet, invert it, and then slide it back into the skillet to cook the other side for another 3-4 minutes or until it's fully set and slightly golden.

  7. Remove from the skillet, let it cool for a few minutes, and then slice it into wedges.
